Green Enchiladas Casserole:
Ingredients you will need:
1 – Medium Can of La Palma Green Enchiladas Sauce
1 – Package of 3 to 5 dozen Corn Tortillas
1 – Package of Mexican “Ranchero Cheese” crumbled
1-lb of shredded chicken
1 – lb of Monterrey Jack Cheese – cut into semi-thin slices
4 – Large Haas Avocados
1 – small tub of Knudsen’s Sour Cream
1 – Bottle of Vegetable oil
1 – Frying Pan
1 – Sauce Pan
On a frying pan, you will place some oil on medium heat. At the same time you will place La Palma Green Enchilada Sauce in a small saucepan on low heat until it simmers. Once the oil is hot you will start to place the tortillas in the oil for 30 seconds on each side, place onto the casserole folded in half. Continue this until the bottom of the casserole is covered with the tortillas.
Take the Green sauce and pour it over the tortillas, add the shredded chicken and Monterrey Jack Cheese slices and place them over the tortillas and sauce. Bake until the cheese is melted.
Remove from the oven and place sour cream and Ranchero Cheese over the melted cheese and serve. Best when served warm.
